Stir in the coconut, nuts, pineapple, and carrots with a mixing spoon. Add the wet ingredients to the carrot mixture and fold until everything is well incorporated. Make a well in the center and add sugar, oil, eggs, and vanilla.
Next, add in Pure Vanilla extract, and Granulated Sugar.
Add oil and pineapple, mix well.
Add in the carrots, flaked coconuts, walnuts (if using), and pineapple. Sift together the dry ingredients in a large bowl. Add dry ingredients to wet and fold to combine.
