Award Winning Pineapple Upside Down Cake. Pineapple upside-down cake is a basic butter-vanilla cake with a caramelized topping consisting of pineapples and maraschino cherries. On my way to a Hawaiian-themed party, all I could think of was Pineapple Upside Down Cake.
Cream together the softened butter and sugar in the bowl of a stand mixer, until the mixture is light in color. Gradually add some of the milk, alternating with the flour until a soft batter comes together. Meanwhile, make cake batter: Sift the cake flour, baking powder, and salt.
Sprinkle brown sugar evenly over butter mixture.
Arrange pineapple slices on brown sugar.
Space pineapple rings atop the sugar. Sift together the flour, baking powder and salt—then hold this aside. Topping: Place the butter and brown sugar in a small saucepan and stir over medium heat until the butter has melted and the sugar has dissolved.
