Chocolate Andes Mint Cookies. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl. Stir just until the chocolate chips are almost completely melted and then remove the pan from the stove.
Beat in eggs one at a time on high speed. Line cookie trays and scoop cookie dough on tray. Stir in the Andes mint pieces.
In the bowl of an electric mixer, combine the butter and sugars.
Sift the flour, cocoa powder, baking soda and salt into a medium bowl and set aside.
Stir just until the chocolate chips are almost completely melted and then remove the pan from the stove. In a separate mixing bowl, blend the butter with the sugars and vanilla until smooth (I used a stand mixer or a hand-held mixer for this). Add the sugar, butter, eggs, and vanilla to a stand mixer and beat until fluffy.
