Combine cookie crumbs, powdered sugar, chopped pecans and cacao powder in a medium sized mixing bowl. Toast nuts: Arrange the nuts in a single layer on a baking sheet and place the tray in the center of the oven. Place the remaining ½ cup of coconut in a small bowl.
Combine the chocolate wafer crumbs, sugar, half of the almonds, the cocoa powder, maple syrup and rum (to taste) in a mixing bowl to form a well-blended, firm dough.
Make balls- And place them on a cookie tray.
Add the sweetened condensed milk and stir until the mixture comes together and all the ingredients are well incorporated. Melt the chocolate in the microwave and add it to the mixer. Remove from the oven to cool.
